Country Lemon Tart (Excellent)
3 eggs, beaten
1 cup sugar
1 TBSP flour
3 TBSP lemon juice
1 1/2 tsp. grated lemon peel
Confectioners sugar
Butter Pecan Crust:
1 1/4 cups flour
1 egg yolk
1/3 cup finely chopped pecans
3 TBSP powdered sugar
1/2 cup butter or margarine, softened
1/4 tsp. salt
Combine flour, egg yolk, pecans, powdered sugar, butter or margarine, salt in mixing bowl. Blend with fork; form dough into a ball. Dust fingertips with flour; press dough evenly into bottom and up sides of greased pie plate. Bake for 10 minutes.
Pre-heat oven to 350 degrees. Lightly grease a 9" pie plate - Prepare crust. While crust is baking, prepare filling.
Combine eggs, sugar, flour, lemon juice and peel in bowl; stir until smooth. pour mixture into baked crust - Bake 20 - 25 minutes more, or until filling is set. Cool on a wire rack; dust with confectioners sugar. Store covered, in the refrigerator. Makes 8 - 10 servings |
