Mexican Chicken Stew
Ingredients
- 1 TBSP Oill
- 1 pound boneless, skinless chicken breast, cut into cubes
- 1 cup chicken broth
- 1 can (4 oz) chopped gren chiles
- 1 1/2 tsp. Cumin
- 1 tsp. Oregano leaves
- 1 tsp Chili powder
- 1/2 tsp. Seasoned Salt
- 1 can (15 oz.) red kidney beans, undrained
- 1 can (15 oz.)black beans, drained and rinsed
- 1 can (16 oz.) whole kernel corn, drained
- 1/2 cup sliced green onion
Instructions
- 1. Heat oil in large skillet over medium-high heat. Add chicken and cook 5 minutes, stirring often. Remove chicken and sete aside.
- 2. Add remaining ingredients except onion - to skillet, mix well. Bring to a boil, reduce heat to medium and cook 10 minutes.
- 3. Stir in cooked chicken and onion; simmer 5 - 10 minutes.
- Makes 6 servings
