Mexican Chicken Stew

Ingredients
  

  • 1 TBSP Oill
  • 1 pound boneless, skinless chicken breast, cut into cubes
  • 1 cup chicken broth
  • 1 can (4 oz) chopped gren chiles
  • 1 1/2 tsp. Cumin
  • 1 tsp. Oregano leaves
  • 1 tsp Chili powder
  • 1/2 tsp. Seasoned Salt
  • 1 can (15 oz.) red kidney beans, undrained
  • 1 can (15 oz.)black beans, drained and rinsed
  • 1 can (16 oz.) whole kernel corn, drained
  • 1/2 cup sliced green onion

Instructions
 

  • 1. Heat oil in large skillet over medium-high heat. Add chicken and cook 5 minutes, stirring often. Remove chicken and sete aside.
  • 2. Add remaining ingredients except onion - to skillet, mix well. Bring to a boil, reduce heat to medium and cook 10 minutes.
  • 3. Stir in cooked chicken and onion; simmer 5 - 10 minutes.
  • Makes 6 servings
