Lemon Pie Cookies

Ingredients
  

  • Blend:
  • 1 cup soft margarine
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1/4 tsp. salt
  • Press into 9 x 13 pan
  • Bake 20 minutes at 350 degrees
  • Beat:
  • 4 eggs
  • 2 cups sugar
  • grated rind of 1 lemon
  • 1/2 tsp. baking powder
  • 6 TBSP (1/3 cup) lemon juice
  • Pour over first layer

Instructions
 

  • Bake at 350 for 20 - 25 minutes more. Watch closely. Top should be consistency of pie filling and light brown. Sprinkle powdered sugar on top while hot. Cool well before cutting into squares and removing from pan.
