Crock Pot Chicken Stew

Ingredients
  

  • 1 package frozen grilled chicken breast strips, about 2 cups
  • 1 med. onion, chopped coarsely
  • 1 green bell pepper, chopped coarsely
  • 1 or 2 jalapeno peppers, minced
  • 1 can (15 oz.) diced tomatoes with juice
  • 1 can (15 oz.) whole kernel corn, drained
  • 1/4 cup converted rice
  • 1 1/2 cups chicken broth
  • 1/2 tsp. cumin
  • 1/4 tsp. oregano leaves
  • dash of cayenne pepper
  • salt and pepper to tast
  • 1 to 2 tablespoons cornmeal, mixed with 1 TBSP. cold water

Instructions
 

  • Combine all ingredients, except for cornmeal/water mix, in the crockpot. Cover and cook on low for 6 1/2 to 8 hours, or on high for 3 to 3 1/2 hours. To thicken, stir in the cornmeal/water mixture during the last 10 or 15 minutes. Serves 4
