Hummingbird Cake
Ingredients
- Cmbine:
- 3 cups flour
- 2 cups sugar
- Add:
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 3 eggs beaten
- 1 cup oil
- 1 1/2 tsp vanilla
- 1 8 oz can crushed pineapple, undrained
- 1 cup chopped pecans
- 2 cups chopped bananas
- ICING:
- Mix 8 oz. softened cream cheese
- 1/2 cup softened margarine
- 1 pound powdered sugar
- 1 tsp. vanilla
- 1/2 cups chopped pecans
Instructions
- Bake at 350 for 25-30 minutes in 3 9-inch cake pans. Cool 10 minutes & remove from pans. Let cool completely. Then spread icing over each layer, top and sides.
