Hummingbird Cake

Ingredients
  

  • Cmbine:
  • 3 cups flour
  • 2 cups sugar
  • Add:
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs beaten
  • 1 cup oil
  • 1 1/2 tsp vanilla
  • 1 8 oz can crushed pineapple, undrained
  • 1 cup chopped pecans
  • 2 cups chopped bananas
  • ICING:
  • Mix 8 oz. softened cream cheese
  • 1/2 cup softened margarine
  • 1 pound powdered sugar
  • 1 tsp. vanilla
  • 1/2 cups chopped pecans

Instructions
 

  • Bake at 350 for 25-30 minutes in 3 9-inch cake pans. Cool 10 minutes & remove from pans. Let cool completely. Then spread icing over each layer, top and sides.
