Texas Borracho Beans
Drunken (Borracho) Beans made with chilis and beer
Equipment
- 1 crock pot
Ingredients
- 2 lb Pinto Beans
- 1 lb Bacon
- 1 large Onion, diced
- 1 can Rotel, or jalapenos, or both
- 1 can Tomatoes, diced
- 1 T Minced garlic
- 1 T Chili Powder
- 1 t Cumin
- 1 t Salt
- 1 t Black Pepper
- 1 quart Shiner Bock Beer
- 1 bunch Cilantro, chopped (optional)
Instructions
- Put beans in a large container and cover with water. Soak overnight.
- Drain beans and add to crock pot.
- Slice bacon into 1" pieces. Cook in a skillet then add to crock pot, grease and all.
- Add the chilis, tomatoes, cilantro, garlic, salt, pepper, chili powder, cumin, and onions to crock pot.
- Add the beer to the crock pot, stir until mixed, then cover with an inch of water.
- Cook on high for at least 4 hours, then reduce to low if desired.
- End product should be the consistency of a thick soup. If dry, add water and heat.
