Texas Borracho Beans

Drunken (Borracho) Beans made with chilis and beer

Equipment

  • 1 crock pot

Ingredients
  

  • 2 lb Pinto Beans
  • 1 lb Bacon
  • 1 large Onion, diced
  • 1 can Rotel, or jalapenos, or both
  • 1 can Tomatoes, diced
  • 1 T Minced garlic
  • 1 T Chili Powder
  • 1 t Cumin
  • 1 t Salt
  • 1 t Black Pepper
  • 1 quart Shiner Bock Beer
  • 1 bunch Cilantro, chopped (optional)

Instructions
 

  • Put beans in a large container and cover with water. Soak overnight.
  • Drain beans and add to crock pot.
  • Slice bacon into 1" pieces. Cook in a skillet then add to crock pot, grease and all.
  • Add the chilis, tomatoes, cilantro, garlic, salt, pepper, chili powder, cumin, and onions to crock pot.
  • Add the beer to the crock pot, stir until mixed, then cover with an inch of water.
  • Cook on high for at least 4 hours, then reduce to low if desired.
  • End product should be the consistency of a thick soup. If dry, add water and heat.
