Ingredients
  

  • 3 eggs
  • 1 cup of oil
  • 1 TBSP. vanilla
  • 2 cus shredded zucchini, unpeeled
  • 1 1/2 tsp. baking soda
  • 1 TBSP. cinnamon
  • 1/4 tsp. baking powder
  • 2 cups sugar
  • 2 cups flour
  • 1 tsp. salt
  • 1 cup chopped pecans

Instructions
 

  • Mix together and bake in lightly greased muffin pans at 325 - approx. 20 - 30 minutes
