Ingredients
3 eggs
1 cup of oil
1 TBSP. vanilla
2 cus shredded zucchini, unpeeled
1 1/2 tsp. baking soda
1 TBSP. cinnamon
1/4 tsp. baking powder
2 cups sugar
2 cups flour
1 tsp. salt
1 cup chopped pecans
Instructions
Mix together and bake in lightly greased muffin pans at 325 - approx. 20 - 30 minutes
