Zucchini Muffins
Ingredients
- 3 eggs
- 1 cup of oil
- 1 TBSP. vanilla
- 2 cus shredded zucchini, unpeeled
- 1 1/2 tsp. baking soda
- 1 TBSP. cinnamon
- 1/4 tsp. baking powder
- 2 cups sugar
- 2 cups flour
- 1 tsp. salt
- 1 cup chopped pecans
Instructions
- Mix together and bake in lightly greased muffin pans at 325 - approx. 20 - 30 minutes
